Spiced Pear & Fig Chutney

Here's another of my favourite Christmas/seasonal recipes - Spiced pear and fig chutney.
I've made this every year for about 14 years it's delicious with cheese, meats etc. Really easy to make but it needs to sit for a month before it's ready to eat.
I make a big batch so I have some jars to go in the hampers I put together as gifts.
Spiced Pear and Fig Chutney
  • 1.5 kg pears, peeled, cored and chopped
  • 2 garlic cloves, crushed
  • 2 tsp salt
  • 225g figs, chopped
  • 250ml white wine vinegar
  • 250ml water
  • 1 tsp each ground cinnamon and ginger
  • ¼ tsp each ground cloves and nutmeg
  • 1 large onion
  • 100g soft brown sugar
  • 100g molasses sugar
Put all the ingredients except he sugars, into a stainless-steel preserving pan with 250ml water. Bring to the boil, then simmer for 15 minutes.
Add the sugars and heat until dissolved. Bring to the boil, then simmer for 1-1 ½ hours until thick (a spoon drawn across the base should leave a trail for a few seconds)
While the chutney is still hot, ladle it into sterilised jars using a wide-necked funnel and store in a cool dark place for at least a month before using.
